Low-carb breakfast pizza

Lets, be honest, this low-carb breakfast pizza can be enjoyed any time of day. Follow this recipe exactly or try it with your own favourite toppings.

Ingredients for low-carb breakfast pizza recipe

For pizza dough

1 cup grated mozzarella cheese

1 cup almond meal

2 tbsp cream cheese

1 egg, beaten

For topping

¼ cup passata

¼ cup mozzarella cheese

6 button mushrooms, sliced

6 cherry tomatoes, sliced

½ cup basil leaves

Method to make low-carb breakfast pizza recipe

Preheat the oven to 180°C.

Make the dough by placing the grated cheese, almond meal and cream cheese in a microwave-safe bowl and heating in the microwave for 1 minute. Remove from the microwave. Add the egg and stir vigorously until combined into a dough.

Sprinkle a little almond flour on your benchtop to avoid sticking. Roll out your pizza to the desired thickness.

Bake on a pizza tray in the oven for 10 minutes. Turn the base over and bake for a further 5 minutes.

Remove from the oven and top with the passata, cheese, mushrooms, and cherry tomatoes. Return pizza to the oven and bake until the cheese is melted and the mushrooms are cooked through.

Top with basil leaves and serve.

Citro food tip

Want a vegan version? Use vegan mozzarella, vegan cream cheese and sub the egg for 1 tbsp aquafaba (chickpea water). Make it a meal by adding some healthy sides such as fresh fruit salad, hash browns, and orange juice.
