Barbecued spiced chicken patties recipe

This recipe tastes great barbecued. The patties can also be shallow fried in a pan or cooked in an air fryer. Food photography by Darrin James.

The fresh spicy flavours and juicy texture of these patties will leave you gasping for more. Nutritionist Faye James has made this recipe gluten-free and they taste sensational with fresh lime and dipping sauce.

Ingredients for spiced chicken patties recipe

500g chicken breast mince

2 tablespoons red curry paste

2 spring onions, chopped

1 clove garlic, minced

1 egg, whisked

1⁄2 cup almond meal

2 tablespoons fish sauce

1 tablespoon soy sauce

1 cup fresh coriander leaves chopped

Leafy greens, cucumber and carrot to serve

Method to make spiced chicken patties recipe

Combine all the ingredients into one bowl. Shape into eight patties. Refrigerate for an hour.

Shallow fry on a low-medium heat for around six minutes each side. Alternatively, put in the air fryer for 6 minutes on medium. Barbecue on a medium hit until cooked through in the middle.

Serve with a leafy green salad, cucumber, carrot and chopped peanuts.

Citro food tip

Almond meal makes a great substitute for breadcrumbs to bind the patties together. Refrigerating them first will also help keep the low-fat patties in one piece when you cook them.
